This jaw dropping broccoli dish is a great salad to keep in the fridge for lunch. The broccoli is lightly blanched and tossed with sweet roasted tomatoes, peppery rocket and nutty quinoa. Served with a fresh lime dressing and topped with toasted almonds and feta cheese. (Feta cheese may be omitted for a vegan option).
